Originally coined in 2010 by web design pioneer Ethan Marcotte (source: alistapart.com), responsive web design can be best explained like so:
A responsive web design adapts the content, images and video of your website to fit the screen size of the device it's being viewed on, including computers and mobile devices like tablets and mobile phones. Responsive websites make it easier for customers to read content and find the services or products they need, leading to happier customers and more enquiries.
Responsive web design grew out of a need for cost-effective mobile-friendly websites. In the past, large businesses would build one website for desktop and laptops, and a second website for mobile devices like iPads and iPhones. This approach creates great user experiences, but you need to pay for the design and development of two different websites.
Responsive web design was a god-send for small businesses, blogs and news providers, and small eCommerce stores. It allows the customers to receive a great website experience on their phones or tablet, without costing you extra in development costs.
In April 2016, 41% of website visits by Australians were made from mobile devices (source: Statcounter).
Responsive websites scale text, images and video to be the perfect size to view on mobile devices. Users will enjoy reading the content on your website. To optimise your content for the shorter-attention span of users on mobile devices (as opposed to desktop users) you can remove or modify content and images to fit.

Making your website mobile-friendly means visitors will never need to pinch-to-zoom your website to read tiny text or tap a tiny button. Menus, call to actions and links are all the perfect size for the user to read and tap. Responsive websites will also connect to mobile services like phone and email, so visitors can call or email your business with one tap.
Any website that isn't mobile-friendly will have high bounce rates (visitors viewing only one page on your website and leaving). This is because mobile internet users have become accustomed to websites that are optimised for the smaller screens. Unless your business offering is completely unique, most users lack the patience to navigate a non-responsive website, and will simply press the back button. Then they'll find a competitor with a responsive website.
